Besan Chilla (Eggless Vegetable Omlette) for a chilly night!

Hey Everyone!


I don't know about other cities but here in Pune the weather has been really cold especially in the night time. I haven't seen sun in days and feels like winter already :( I hope the sun comes out soon! Anyways in such dull and damp weather I really get lazy for cooking and often make something which is quick and easy and can be made under 15 mins flat!


Once such dish I often make are Besan Chillas or you can call them Eggless Vegetable Omlette :) Its one dish which is highly versatile and never fails to satisfy my taste buds :D


Please don't go on pics and think they are burnt! They are NOT! I like my besan chillas on crispier side so always cook them on slow flame to get that crispiness going! I usually add in bunch of vegetables whatever I  have in hand like tomatoes, onions, capsicums, cucumbers etc. Just remember to make the batter thin, a little thick than buttermilk consistency, if the batter is too thick your omlette will take longer to cook and might remain uncooked from within.


Besan Chilla (Eggless Vegetable Omlette)
Recipe will make 2 to 3 omlettes
Ingredients:-
-> 3 tbsp besan (gram flour)
-> 1 green chili chopped finely
-> 1 tomato chopped finely
-> 1 onion chopped finely
-> 1 small cucumber chopped finely
-> a pinch of asafoetida (Hing)
-> Salt to taste
-> 1/2 tsp of cumin seeds
-> a pinch of turmeric powder
-> Oil to cook the omlette
-> Water as required

Procedure:-
-> Mix besan and water and make thin watery paste
-> Now add in rest of vegetables, salt, chili powder, turmeric, hing, green chilies and cumin seeds
-> Mix the batter well and keep it aside for 10 mins
-> Heat a non stick pan and sprinkle some oil, pour little batter on the hot pan, make sure the spread is thin, do not overlap the batter or else it will become too thick
-> Drizzle some oil on the sides of the chilla while its cooking
-> Flip the chilla on the other side after 5 mins or once the bottom is cooked properly
-> Cook the chilla on slow gas for 8 to 10 mins until it gets cooked evenly on both the sides.
-> Remove from heat and serve hot with chutney or my favorite tomato sauce!

  11. tried this yesterday but without jeera and cucumber.
    loved it . But what can I do to balance the flavour of besan. my husband doesnt like besan much.
