Chocolate Vanilla Marble Cake

I have always been a big fan of marble cakes! The chocolate swirls wrapped around delicious vanilla makes the cake even more exotic! Though by looking at the photo it may seem tough to get perfect that marbling effect but its very much simple! Marble cake is nothing but plain vanilla pound cake divided into half and mixed the other half with either rich coco powder or melted bitter sweet chocolate. Once you have spooned the batter into a bundt pan run a knife along the batter to get those perfect swirls. So easy!

Oreo Cookies Chocolate Cream Cake

Who can say no to an Oreo Cookie? I am still yet to meet someone who dislikes Oreo's. These are very popular amongst kids as well as older generations. During my visit to US last year I understood the true craze of these cookies! Probably every trolly in the supermarket had big packs of Oreo's. Its packing also states "America's Favorite Cookie"! Oreo cookies are probably one of the oldest cookies available since 1920's. I have seen them being used in ice creams, milkshakes, cakes, puddings, fudges etc. I too enjoy these cookies especially with a cold glass of milk. Oreo's are so famous that it even has Oreo Cookie Day which is celebrated on March 6th.

Eggless Dark Chocolate Cake with Chocolate Mascarpone Frosting

First of all here's wishing all the wonderful women a very Happy Women's Day we rock girls!!
Starting with today's post, I made this Eggless Dark Chocolate Cake with Chocolate Mascarpone Frosting for my dear roommate V. She celebrates her birthday on Women's Day. Being pure vegetarian she doesnt eat eggs so with little googling I came across Sandhya's recipe for Eggless Chocolate Cake and it sounded perfect. I emailed her regarding a query and she was kind enough to reply back immediately. Thanks Sandhya for sharing such a wonderful recipe, I have used her recipe as a base and made some changes.

From the moment I saw homemade mascarpone cheese recipe on Deeba's blog I was itching to make it at home but due to some or the other reasons I really couldnt find time nor an occasion. I have used mascarpone cheese before in my Tiramisu but nothing can compare the homemade version. I was in for a surprise, mascarpone turned out to be incredibly rich and creamy! I just couldnt stop having it and I am sure I am going make this very often. It is so easy to make and so very cheap from the ones we get in the market. You can even use mascarpone cheese inplace of cream cheese in your dishes, use it in curries to make them rich and creamy or in your desserts or even while making some basic white pasta sauce or in dips and sauces...phew the list could go on and on possibilites are endless!! So what are you waiting for rush to your kitchen and make some homemade cheese!!

Mascarpone,Chocolate,Chocolate Cake,Eggless Chocolate Cake,Chocolate Mascarpone frosting

Ingredients:-
2 cups all purpose flour
1 1/2 cups brown sugar
3 tbsp Hersheys Dark coco powder (You can even use Cadbury's)
2 tsp Baking powder
1 tsp baking soda
1/2 cup vegetable oil
1 cup strong black coffee
1 cup beaten curd (without water)
2 tsp vanilla extract

Procedure for Cake:-
  • Preheat the oven to 190 degrees C. Grease and line a 6 inch or 7 inch round cake tin.
  • Sieve flour, coco powder, baking soda and baking powder.
  • Form a well in between and add in the liquid ingredients one by one and beat well with each addition.
  • Add in vanilla essence in the end and give a quick mix.
  • Pour the batter in the tin and bake for 40 to 50 mins until a tooth pick inserted comes out clean.
  • Once done, cool is completely about 30 to 40 mins before slicing the cake horizontally into 3 slices.

Recipe for Mascarpone Cheese:-
500ml fresh cream 25% fat (I used Amul)
1 tbsp fresh lime juice

Procedure:-
  • Heat the cream over a double boiler until it reaches 82 degrees C or 180 F. This will take about 15 mins, dont forget to stir the cream often.
  • Stir in the fresh lime juice and stir it continuosly until it starts to thicken.
  • Remove from heat and let it get cooled down to room temperature.
  • Line a vessel with four layers of muslin cloth. Pour the mixture in the vessel layered with muslin cloth and refrigerate over night or upto 24 hours.
  • After refrigeration the cream will have thicken up further and will be soft to touch.
Recipe for Chocolate Mascarpone Frosting:-
1 cup mascarpone cheese (Half of the above recipe)
200 ml heavy whipping cream
2 tbsp coco powder
5 tbsp vanilla sugar

Procedure:-
  • Chill the beater knives and the vessel in the freezer for 15 mins.
  • Make sure the whipping cream is also chilled but not frozen.
  • Beat all the ingredients together for about 5 mins until stiff peaks form. Donot overbeat it may lead the cream to curdle.
Soaking Solution:-
1/2 cup of water
2 tbsp sugar
1 tsp rum (optional)

Decoration:-
Color chocolate sprinkles to decorate the cake
Let your imagination flow :-)

Assembling:-
  • Place one of the three layers on the serving plate. Drizzle sugar syrup over the cake to moisten it.
  • Spread the chocolate mascarpone frosting evenly on all the sides.
  • Repeat this procedure for all the 3 layers. Cover the sides and top of the cake with frosting.
  • I have given an uneven look of frosting on the cake purposely.
  • Decorate the sides of the cake with colorful chocolate sprinkles or as you wish.
  • The icing is also perfect for piping.

Verdict? I simply loved this cake, was moist and chocolaty to the core. The mascarpone frosting was very rich and light an absolute delight to work with and delicious in taste. V enjoyed her cake and even commented about this being the best cake she has ever had on her birthday :-) Now that certainly makes it a winner isnt it?

Vanilla Beans and Chocolate Chip Muffins

I have been planning to use the bunch of Vanilla Beans I got from Switzerland from a very long time. Apart of making some Vanilla Sugar and Vanilla Essence I really wanted to bake something. Initially I thought of baking a pound cake but didnt have enough flour in hand so I turned them into mini muffins.

What makes these mini muffins special is the fact that the I didnt follow any recipes, just mixed and matched ingredients i had on hand and BANG!! I got these wonderfully moist and sinfully delicious muffins. Oh i love the flavor of vanilla beans in them, it filled my kitchen with an aroma I have never experienced before. I am so gonna use vanilla beans in my all bakes! I wish we could get these here easily. Next on target is to make some homemade Vanilla Essence and Vanilla Sugar.

Makes 12 muffins
Ingredients:-
1/2 cup unsalted butter, at room temperature, softened
1 egg
1 1/2 cups of all purpose flour
1 vanilla bean
1 cup sugar
1 cup chocolate chips
1/3 cup milk
1 tsp baking powder
1/2 tsp baking soda

Procedure:-
  • Grease and flour 12 muffin moulds.
  • Preheat the oven to 180 degrees C.
  • Sieve flour, baking powder and baking soda in a seperate bowl.
  • Split the vanilla bean from middle and remove the seeds. Mix the seeds in the milk.
  • Beat together sugar and butter until light and fluffly
  • Add in the egg and beat for another 2 mins.
  • Now mix in the flour and milk alternatively until everything is combined well.
  • Add in the chocolate chips and mix well, donot beat.
  • Fill the muffin cups 3/4 full and bake them for 15 to 20 mins until a tooth pick inserted comes out clean.
  • Serve these warm with a glass of milk.

Verdict?  Muffins were insanely flavorful and soft with melt in mouth texture. If you are a vanilla lover just like me you ve got to try these!

Eggless Chocolate Raisin Coffee Bread

The moment I saw Eggless Coffee Banana Bread at Cilantro i knew i wanted to try out the recipe but I am not a big fan of bananas and hence I dont buy them very often until and unless I am making a fruit salad. I used Cilantro's recipe as a base and made this Eggless Chocolate Raisin Coffee Bread. I love Cadbury's Temptations especially the one with raisins and rum, so I was inspired to use chocolate and raisins combo and was quite sure it would work well. Another reason for using raisins was that, few weeks back i bought a large bag of raisins which were on sale! The cake is perfect as a tea time treat, its dense and chocolaty, not too sweet but has perfect blend of coffee and chocolate! This is a perfect bread for people like me who love coffee and chocolate together!

Adapted from Cilantro's recipe
Ingredients:-
1 1/2 cups of all purpose flour
2 tbsp cocoa powder
1 tsp baking soda
1 1/2 tsp baking powder
a pinch of salt
1/3 cup oil
1 cup sugar
1 cup freshly brewed strong black coffee*
1 cup raisins
2 tbsp rum (optional)
1 tsp vanilla extract

* Make sure the coffee is warm and not boiling hot.

Procedure:-
  • Soak the raisins with 2 tbsp of rum. If you dont want to use alcohol, pls use orange juice or you can completely skip this step as well. I prefer juicy raisins in my cake hence i soaked them with 2 tbsp of rum for about 2 hours.
  • Preheat the oven to 180 degrees celsius. Grease and flour a loaf pan 5-9 inch in size.
  • Sieve the dry ingredients and keep aside.
  • In a seperate bowl, mix together oil, sugar and vanilla. Add in the flour mixture alternatively with black coffee.
  • Sprinkle some flour on raisins and add them into the batter. Mix them well.
  • Pour the cake in greased or lined cake pan and bake at 180 degrees C for 40 to 45 mins, until a tooth pick inserted comes out clean.
  • Cool the cake completely before slicing. The  tastes even better after refrigeration.

Nanaimo Bars - Daring Bakers Challenge for January 2010

The January 2010 Daring Bakers' Challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten-Free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe are on 101 Cookbooks and www.nanaimo.ca.

This was the first time I was making Nanaimo Bars and I am so impressed with these I cant tell you. These bars are packed with goodness of chocolate with almonds and coconut as base, the middle layer consist of rich vanilla custard cream, topped with melted dark chocolate. I wanted to make Graham Crackers at home from a very long time since we dont get these here, this challenge gave me the perfect opportunity to try my hands on some delicious home made graham crackers plus making them was so easy and they tasted fabulous!

Recipe for Graham Crackers:-
2 1/4 cups of all purpose flour (You can use whole wheat + APF)
1 cup (200gms) Dark brown sugar, lightly packed
1 tsp baking soda
3/4 tsp salt
7 tbsp (100gms) unsalted butter, cut into squares, frozen
1/3 cup (80 ml) honey
5 tbsp (75 ml) whole milk
2 tbsp pure vanilla extract

Procedure:-
  • In the bowl of a food processor fitted with a steel blade, combine the flours, brown sugar, baking soda, and salt. Pulse on low to incorporate. Add the butter and pulse on and off, until the mixture is the consistency of a coarse meal. If making by hand, combine aforementioned dry ingredients with a whisk, then cut in butter until you have a coarse meal. No chunks of butter should be visible.
  • In a small bowl or liquid measuring cup, whisk together the honey, milk and vanilla. Add to the flour mixture until the dough barely comes together. It will be very soft and sticky.
  • Turn the dough onto a surface well-floured with sweet rice flour and pat the dough into a rectangle about 1 inch thick. Wrap in plastic and chill until firm, about 2 hours, or overnight.
  • Divide the dough in half and return one half to the refrigerator. Sift an even layer of sweet rice flour onto the work surface and roll the dough into a long rectangle, about 1/8 inch thick. The dough will be quite sticky, so flour as necessary. Cut into 4 by 4 inch squares. Gather the scraps together and set aside. Place wafers on one or two parchment-lined baking sheets. Chill until firm, about 30 to 45 minutes. Repeat with the second batch of dough.
  • Adjust the rack to the upper and lower positions and preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Gather the scraps together into a ball, chill until firm, and reroll. Dust the surface with more sweet rice flour and roll out the dough to get a couple more wafers.
  • Prick the wafers with toothpick or fork, not all the way through, in two or more rows.
  • Bake for 25 minutes, until browned and slightly firm to the touch, rotating sheets halfway through to ensure even baking. Might take less, and the starting location of each sheet may determine its required time. The ones that started on the bottom browned faster.
  • When cooled completely, place enough wafers in food processor to make 1 ¼ cups (300 mL) of crumbs. Another way to do this is to place in a large ziplock bag, force all air out and smash with a rolling pin until wafers are crumbs.

Nanaimo Bars
Ingredients:-
For Nanaimo Bars — Bottom Layer
1/2 cup (115 g) (4 ounces) Unsalted Butter
1/4 cup (50 g) (1.8 ounces) Granulated Sugar
5 tablespoons (75 mL) Unsweetened Cocoa
1 Large Egg, Beaten
1 1/4 cups (300 mL) (160 g) (5.6 ounces) Gluten Free Graham Wafer Crumbs (See previous recipe)
1/2 cup (55 g) (1.9 ounces) Almonds (Any type, Finely chopped)
1 cup (130 g) (4.5 ounces) Coconut (Shredded, sweetened or unsweetened)

For Nanaimo Bars — Middle Layer
1/2 cup (115 g) (4 ounces) Unsalted Butter
2 tablespoons and 2 teaspoons (40 mL) Heavy Cream
2 tablespoons (30 mL) Vanilla Custard Powder (Such as Bird’s. Vanilla pudding mix may be substituted.)
2 cups (254 g) (8.9 ounces) Icing Sugar

For Nanaimo Bars — Top Layer
4 ounces (115 g) Semi-sweet chocolate
2 tablespoons (28 g) (1 ounce) Unsalted Butter

Procedure:-
  • For bottom Layer: Melt unsalted butter, sugar and cocoa in top of a double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, nuts and coconut. Press firmly into an ungreased 8 by 8 inch pan.
  • For Middle Layer: Cream butter, cream, custard powder, and icing sugar together well. Beat until light in colour. Spread over bottom layer.
  • For Top Layer: Melt chocolate and unsalted butter over low heat. Cool. Once cool, pour over middle layer and chill.
  • I made some swirls on the top with melted chocolate and custard cream, personally i loved the effect!

Additional Information:

These bars freeze very well, so don’t be afraid to pop some into the freezer.

The graham wafers may be kept in an airtight container for up to 2 weeks. Mine lasted about that long.

If making the graham crackers with wheat, replace the gluten-free flours (tapioca starch, sweet rice flour, and sorghum flour) with 2 ½ cups plus 2 tbsp of all-purpose wheat flour, or wheat pastry flour. Watch the wheat-based graham wafers very closely in the oven, as they bake faster than the gluten-free ones, sometimes only 12 minutes.

For the Nanaimo Bars, if making with wheat, replace the gluten-free graham wafer crumbs with equal parts wheat graham wafer crumbs!

Eggless Low Fat Hot Chocolate Muffins

Its been quite a while since i last baked anything with chocolate. The baker in me was desperate and it was like a race against the time as my work was keeping me quite busy. Finally my craving got better of me and i decided to give up, but to my horror i was out of eggs as well as cocoa powder, I felt as if my world turned upside down!! No that is not an exaggeration and I am sure the bakers would understand my sentiments. Now i really had to bake something chocolaty, ok so i decided to go for eggless muffins, quick and easy but to go for cocoa powder hunting at 11pm in the night was out of question. I could use some of my dark chocolate which i got from swiss but i just have few slabs left until my next batch comes from abroad and so i guard them with my life!! Argghh.....pacing up and down in my room i saw some hot chocolate sachets of Lindt, do i need to mention what happened next?

My recipe for these low fat, eggless chocolate muffins is inspired from Mandira's recipe for Eggless Chocolate Nut Muffins which i had bookmarked sometime back.

Eggless Baking,Muffins,Chocolate

Recipe yields 6 large muffins
Ingredients:-
1 1/4 cup all purpose flour
1/2 cup sugar (adjust according to taste, if required)
1 1/2 tbsp good quality hot chocolate powder
1/2 tsp baking soda
1 tsp baking powder
3 tbsp oil
1/2 cup milk
1 tsp vanilla extract


Procedure:-
  • Preheat the oven to 180 degrees C.
  • Line 6 muffins holders with liners or grease them.
  • Sieve together flour, hot chocolate powder, baking soda and baking powder.
  • Add in oil, milk and whisk properly until everything is mixed properly. I did not use a beater for this, hand whisk is fine.
  • Finally add vanilla extract and mix well.
  • Fill the muffin cups 3/4 full and bake for 15 to 18 mins, until a tooth pick inserted comes out clean.
  • Serve them warm with a cold glass of milk, enjoy!

Zebra Cake for Taste & Create

Before I start with my post , today is my baby sister R's birthday, I wish her all the happiness in the world....Happy Birthday honey !!!!

This month for Taste and Create i was paired up against the very talented Poornima from Tasty Treats, I am sure everyone is aware of her wonderful collection of recipes. I have been following her blog since i started blogging and i truly admire her talent for cooking and baking. There are many dishes which I wanted to try out from her blog especially her Spiced Hot Chocolate which is my favorite!!

From all the delicacies, I chose the delicious Zebra Cake, my strips arnt very clear most probably because i baked these in a rectangular pan as i couldnt find my circular pan (I have been packing for india). The taste was delicious and the cake turned out so moist, its perfect as a tea time treat and quite simple and easy to prepare. I personally love the striking contrast of chocolate and vanilla flavors, it looks gorgeous dont you think?

Thanks Poornima for this wonderful cake, this is off to Taste  and Create for the month of September. I am dedicating this cake to my sister R as well :)

I made half of the below recipe
Ingredients:
2 cups all purpose flour
1 tbsp baking powder
4 medium eggs
1 heaping cup sugar
1 cup milk
1 cup oil
1 tsp vanilla
3 tbsp coco powder
Baking,Cakes,Chocolate,Tea Time Treats,Zebra Cake

Procedure:
  • Preheat the oven to 180 degrees C.
  • Grease and line a 9inch cake pan.
  • Sift flour and baking powder together and set is aside.
  • Beat together eggs and sugar until light and frothy.
  • Add in vanilla, oil and milk, beat well until well blended.
  • Now add in flour in 3 to 4 intervals and beat well.
  • Divide the batter into 2 bowls.
  • Add in the coco powder in one of the bowls and beat well.
  • Spoon about 3 tbsp of vanilla batter in the center of the pan.
  • On top of vanilla batter add 3 tbsp of chocolate batter and go on.
  • Donot stir, shake or swirl, the batter will spread by itself as you go on.
Serve the cake with some chocolate sauce drizzled or like my favorite way with some fresh whipped cream.

French Macarons with Chocolate Ganache...finally i got my FEETS !!!

You cannot imagine the amount of happiness and satisfaction i got when I saw these little drops in the oven and developing their small feets!! The moment I tucked them in the oven, I sat beside to see them rise and turn into these gorgeous treats! I was literally jumping up and down with joy. I was terribly disappointed from my last attempt and truly determined to get them right so this time i took all the advice i could get, read numerous posts, videos, etc.

I am thankful to Deeba who suggested to check the folding technique, the video for which is here, she also suggested to use a recipe with one egg white as its easier and helps to reduce wastage in case of disasters. The video is by ChefNini and I must say its really good. I would suggest everyone to go through the video before trying your hands on macarons. Chefnini suggests to warm up the egg whites over a double boiler which i was skeptical so when Rachael of  La Fuji Mama made her macs using chefnini's recipes, i contacted her regarding the warming of the egg over the double boiler and she mentioned that she had used an aged egg and skipped the warming method. I too used an aged egg for 48 hours and it did wonders for me. Thank you Deeba, Rachael and everyone who supported and encouraged me, thanks a zillion !!!

Makes 8 macarons
Ingredients for Macarons:
1 egg white aged for 48 hours in fridge
(Remove from fridge before 3 to 4 hours to bring the white to room temperature)
65 gms icing sugar
40 gms powdered almonds (sieved)
15 gms castor sugar (I used very fine)

Ingredients for Chocolate Ganache:
50 ml heavy cream
60 gms bittersweet/semisweet chocolate

Other baking essentials required:
1 pastry bag fitted with 2 cm nozzle
1 baking try lined with parchment paper
electronic beater

Procedure:
  • I had sieved the almond powder and than measured 40gms.
  • Mix together powdered sugar and almonds (make sure you dont have any lumps).
  • Beat the egg white with a electric beater until frothy. 
  • While beating add in the castor sugar (and 1 to 2 drops of color if desired) and beat at high for 2 mins until glossy stiff white meringue forms.
  • Fold the almond and sugar mixture with meringue in 4 to 5 turns. Donot over mix. Fold very gently in one direction only. (Pls refer to the video above for folding technique).
  • Scrape the batter in a pastry bag (standing the bag in a tall glass helps if you're alone).
  • Pipe the batter on the parchment-lined baking sheets in 1-inch (3 cm) circles (about 1 tablespoon each of batter), evenly spaced one-inch (3 cm) apart.
  • Rap the baking sheet a few times firmly on the counter top to flatten the macarons, and let it sit for 40 mins. 
  • After 30 mins preheat the oven to 160 degrees C.
  • Bake the macarons for 10 mins and then reduce the temperature to 140 degrees C and bake for another 4 to 5 mins.
  • Cool completely and store them in air tight containers.

Procedure for Ganache:
  • Heat the cream in a pan, as soon as it stars boiling on the sides remove from heat and add the chocolate pieces in them.
  • Let it stand for a min.
  • Whisk gently until smooth paste.
  • Cool completely before using, after it has cooled ganache will become thicker in consistency and is easy to pipe.
Sandwich the macarons together with a tsp of ganache and store them in air tight container. They will stay upto 5 days.

Verdict: You just cant stop eating them, I am already planning for my next batch..so stay tuned  :-)

My First Daring Baker's Challenge - Dobos Torte

Dobos Torte RecipeThis is my first Daring Bakers Challenge and i am very much excited about it. I wanted to join the Daring Baker's league from a very long time but never got enough courage to do so. Last month finally i convinced myself to give it a try and here i am with my very first challenge. The challenge was to make this exquisite 6 layered Dobos Torte. The August 2009 Daring Bakers' challenge was hosted by Angela of A Spoonful of Sugar and Lorraine of Not Quite Nigella. They chose the spectacular Dobos Torte based on a recipe from Rick Rodgers' cookbook Kaffeehaus: Exquisite Desserts from the Classic Caffés of Vienna, Budapest, and Prague. The Dobos Torta is a five-layer sponge cake, filled with a rich chocolate buttercream and topped with thin wedges of caramel. (You may come across recipes which have anywhere between six and 12 layers of cake; there are numerous family variations!). It was invented in 1885 by József C. Dobos, a Hungarian baker, and it rapidly became famous throughout Europe for both its extraordinary taste and its keeping properties.
I used half of the recipe given as i had used an 7inch baking pan instead of 9 and still managed to get 6 layers. Making the cake wasnt difficult just a little time consuming with lots of patience. I wasnt too keen on using the butter cream as the filling as personally I am not fond of buttercream but as this was my first challenge i did stick to the recipe, only that i didnt use any eggs in the butter cream, just butter, icing sugar and dark melted chocolate did the trick! I used powdered halzelnuts and some chocolate sprinkles to decorate the sides of the cake.
Dobos Torte My Recipe for the Dobos Torte Sponge Layer: 3 large eggs seperated 90 gms of icing sugar, divided 60 gms sifted cake flour 1 tsp vanilla essence Chocolate Buttercream: 100 gms dark chocolate chopped 1/3 cup of softened butter 1 cup confectioner's sugar 1/2 tsp vanilla essence Caramel Topping: 1/2 cups of super fine sugar 6 tbsp of water 4 tsp of lemon juice Finishing Touches: Finely chopped or powdered hazelnuts Chocolate sprinkles How to make Dobos Torte
Directions for the sponge layers:
NB. The sponge layers can be prepared in advance and stored interleaved with parchment and well-wrapped in the fridge overnight.
  • Position the racks in the top and centre thirds of the oven and heat to 400F (200C).
  • Cut six pieces of parchment paper to fit the baking sheets. Using the bottom of a 9" (23cm) springform tin as a template and a dark pencil or a pen, trace a circle on each of the papers, and turn them over (the circle should be visible from the other side, so that the graphite or ink doesn't touch the cake batter.)
  • Beat the egg yolks, 45gm of the confectioner's (icing) sugar, and the vanilla in a medium bowl with a mixer on high speed until the mixture is thick, pale yellow and forms a thick ribbon when the beaters are lifted a few inches above the batter, about 3 minutes. (You can do this step with a balloon whisk if you don't have a mixer.)
  • In another bowl, using clean beaters, beat the egg whites until soft peaks form. Gradually beat in the remaining 45 gms of confectioner's (icing)sugar until the whites form stiff, shiny peaks. Using a large rubber spatula, stir about 1/4 of the beaten whites into the egg yolk mixture, then fold in the remainder, leaving a few wisps of white visible. Combine the flour and salt. Sift half the flour over the eggs, and fold in; repeat with the remaining flour.
  • Line one of the baking sheets with a circle-marked paper. Using a small offset spatula, spread about the batter in an even layer, filling in the traced circle on one baking sheet.
  • Bake on the top rack for 5 minutes, until the cake springs back when pressed gently in the centre and the edges are lightly browned. While this cake bakes, repeat the process on the other baking sheet, placing it on the centre rack. When the first cake is done, move the second cake to the top rack.
  • Invert the first cake onto a flat surface and carefully peel off the paper. Slide the cake layer back onto the paper and let stand until cool. Rinse the baking sheet under cold running water to cool, and dry it before lining with another parchment. Continue with the remaining papers and batter to make a total of 7 layers (6 for the cake and 1 for the top caramel one).

Directions for the chocolate buttercream:
NB. This can be prepared in advance and kept chilled until required
  • On a double boiler, melt the dark chocolate until smooth. Set aside to cool completely.
  • Once the chocolate is cooled, add in the softened butter and beat together until smooth.
  • Slowly add in the icing sugar, little by little and beat together to form creamy icing.
  • Finally add in the vanilla essence and once again give a quick beat.
For Caramel Topping:
  • Choose the best-looking cake layer for the caramel top. To make the caramel topping: Line a jellyroll pan with parchment paper and butter the paper. Place the reserved cake layer on the paper. Score the cake into equal 6 to 7 wedges, this would depend upon the size of your cake.
  • Heat together sugar , water and lime on medium heat until sugar is dissolved.
  • Now turn the heat at high and let it boil for few mins until a dark caramel color is obtained
  • Immediately pour the caramel on the wedges and with lightly greased spoon or spatula cover all sides of the wedges with caramel.
  • Remove them to a seperate sheet and cool completely.
Assembling the Dobos Torte:
  • Divide the buttercream into six equal parts.
  • Place a dab of chocolate buttercream on the middle of a 7 inch cardboard round or a plate and top with one cake layer. Spread the layer with one part of the chocolate icing. Repeat with 5 more cake layers. Spread the remaining icing on the sides of the cake.
  • Arrange the caramel wedges on top of the cake.
  • Decorate the sides of the cake with chopped hazelnuts and chocolate sprinkles.

I am back with Mini Plum Baskets.....My 50th Post

Hi Everyone, I am back with my 50th Post..yuhuuuuuuu..never thought I'll reach this far. Thank you everyone for your support and encouragement shown in past few months, love you all!!!
I wanted to post something sweet for my 50th post hence I made these cute looking tarts with plums. To be honest I wasnt fond of plums until few days back when i tasted the most sweetest and juicy plums ever. I made these mini baskets using whole wheat pastry flour and semolina, adding semolina makes them extra crispy and crunchy. You can choose any other filling of your choice, just make sure that the filling is not too watery or else it may take a lot of time to bake and also the tarts may become soft and not remain crispy. These are wonderful and absolutely guilt free tarts which are sure to make you drool!

Ingredients: (adapted from Kitchen UnPlugged by Gattina) For tarts: 1 cup whole wheat pastry flour 1/2 cup semilona 1/2 tsp sugar 1/2 tsp salt 3 tbsp cold butter cut into pieces 2-3 tbsp cold milk as required For Filling: 2 plum chopped finely 1 tbsp vanilla sugar 1 tbsp raisins 1 tbsp chocolate chips 1 tsp finely chopped pistachios 1 tbsp almond meal Procedure:
  • Mix wheat flour, semilona, sugar and salt in a bowl. Cut in the cold butter and mix with pastry blender or fork until crumbly. Now add in milk little at a time to make dough. Chill the dough for minimum 2 hours.
  • For the filling, mix ala the ingredients together and keep it aside.
  • Roll out the dough to about 1/4 inch thickness and using a cookie cutter or a glass cut round pieces and place them in greased muffin pans making cups.
  • Fill the baskets with a tbsp of the plum filling, sprinkle some chocolate chips on top.
  • With the remaining dough cut small thin strips and arrange them as basket handles, use little milk or water to stick them to the sides.
  • Bake these in preheated oven at 200 degrees C for 20 to 25 mins until golden brown.

Orange Cranberry Chocolate Chunk Cookies and Click May

I am not a very big fan of cookies but i do love chocolate in my cookies so chocolate chips are the best ones for me. I like my cookies crispy but untill now i havent found any recipe which gives me those crispy and crunchy cookies, if anyone has such a recipe pls let me know....Ok back to todays recipe..i had lots of dried cranberries in my pantry which i had bought to make some fruit cake which is still on my mind and hopefully i'll make it in coming weeks. I somehow wanted to use these cranberries so while surfing i found these wonderful cookies at Peabody's blog here, I loved the flavors used in this cookie..orange and cranberry really goes well, in the original recipe she has used pistachios which i replaced with chocolcate chunks as i was out of chocolate chips. Freshly baked these cookies filled my kitchen with beautiful aroma of orange and boy i loved it. The below recipe gave me 36 cookies of medium size. I have made few changes to the original recipe, i have cut down butter and sugar both as i am a health freak and even after these changes my cookies came out wonderful. I found orange flavor little less for my taste so next time i will add little more orange peel and may be little orange essence too. This is definately a keeper, if you love tangy taste of cranberry and orange than this is must a try!!!

Ingredients:
For coating:
1/3 cup sugar
1 tsp grated orange peel
For Cookies:
2 cups all purpose flour
3/4 cup sugar
1/2 cup butter softened
1 tsp baking powder
1/4 tsp baking soda
1 tbsp grated orange peel
1 egg at room temperature
1/2 cup dried cranberries
1/2 cup roughly chopped chocolate chunks or chocolate chips
Procedure:
  • Preheat the oven at 175 degree C and line the baking tray with parchment paper or butter paper.
  • Sieve flour, baking soda and baking powder together and keep aside for coating.
  • Mix together 1/3 cup sugar and 1tsp orange peel nicely and keep it aside.
  • In a bowl beat together butter, sugar and egg on medium speed until fluffy.
  • Now reduce the speed and in flour, baking soda and baking powder and beat well.
  • Add in finely chopped cranberries , orange peel and chocolate chunks and mix well without beater.
  • Make small 1 inch round balls and roll them in the orange peel sugar coating all the sides.
  • Place these balls on baking tray and flatten them using back of a glass.
  • Bake these for 10 to 12 mins or until the sides have turned light brown.
  • Immediately remove and cool them, store in air tight containers.
  • Enjoy with a glass of milk!!!

Eggless Raspberry Tiramisu Cake and few celebrations


The month of may is a celebration month with many birthdays and anniversaries in my family. Last week it was my parents 29th wedding anniversay......yippeee, though i was not present with them but i did make this lovely tiramisu cake for them. We also celebrate many birthdays this month...my cousins Kayur, Nikita and Dwiti celebrate their birthdays and my bhabhi Manjri and Smita too celebrate their birthdays in may......I wish all you dears a very happy birthday...though I am very far but i still do miss you :)) I am dedicating this cake to all of you sweet people who celebrate their special day in this month and to all the MOTHERS as today its MOTHER's DAY....so here's wishing every mom A Very Happy Mothers Day.....I love you Mom and i miss you very much...:))

This cake is very easy and quick to make and its eggless, perfect for vegetarians. The moment i had tried tiramisu first time, i absolutely fell in love with mascarpone cheese, its melt in mouth texture is perfect for desserts. I have used raspberries here but i think you can experiment with other fruits like strawberries, blueberries, mango etc. This recipe is inspired from Happy Home Baker and you can find the original recipe here .

Ingredients:
1 cup dark espresso coffee
1 tbsp kahlua coffee liquor
1 tsp sugar
250 gms mascarpone cheese
1 cup heavy whipping cream
3 tbsp of sugar/vanilla sugar
1 tsp vanilla essence(omit if using vanilla sugar)
1 cup fresh raspberries
chocolate shavings for filling and decorations
1 packet of lady finger or savoiardi




Procedure:
  • Add 1 tsp sugar and kahlua in the coffee and keep aside.
  • Mix mascarpone cheese and 3 tbsp of vanilla sugar together in a bowl.
  • Beat the heavy whipping cream until soft peaks form, add the cream into mascarpone mixture and gently fold in. You can now add in little vanilla essence if required.
  • Take a spring form pan, align the lady fingers on the side of the pan as shown in the pictures.
  • Now dip the remaining lady finger one by one in the coffee mixture and align them on the base of the pan.
  • Add in mascarpone mixture on top and gently spread to cover all sides.
  • Add in some fresh chopped raspberries and chocolate shavings.
  • Similarly repeat the procedure once again. 
  • Cover and chill the cake overnight in fridge.
  • To serve, decorate the cake with raspberries and chocolate shavings.
  • Cut and serve chilled.

Tiramisu.......My New Love


I was introduced to this wonderful dessert few months back by one of my colleagues in the office cafeteria. One bite and i absolutely fell in love with it. From that day onwards on all thursdays i always take my lunch in office canteen as every thursdays we have TIRAMISU :) I wanted to try making this wonderful dessert at home so i started looking out for recipes on the internet. There are many different versions of making this but i chose the recipe shown on you tube here.
Tiramisu is basically made of egg yolks and mascarpone cheese,  garnished with cocoa powder. Some recipes also use whipped egg whites and heavy cream to make it more light and fluffy. For the base i have used Savoiardi which are similar to lady finger. This dish is perfect for social gatherings and parties, you can prepare it one day earlier too. Ingredients:
3 egg yolks at room temperature
250 gms mascarpone cheese
180 ml heavy whipping cream
2 tbsp Kahlua coffee liquor
6 tbsp sugar
1 cup dark espresso coffee
1 packet of Savoiardi or about 24 lady finger
coco powder for garnishing




Procedure:
  • Beat the egg yolks and sugar until light in color for about 2 to 3 mins.
  • Over double boiler cook the egg yolks continuously stirring for about 3 to 4 mins.
  • Remove from double boiler and put the vessel in cold water immediately.
  • Beat the heavy cream until soft peaks form, keep aside.
  • Fold in the mascarpone cheese into the egg yolk mixture and mix well.
  • Now add in the whipped cream and fold in gently.
  • Add the kahlua liquor into the espresso and mix well.
  • Dip the savioardi into coffee mixture and line them on the serving plate or individual dessert bowls.
  • Add in a layer of mascarpone mixture and repeat the process.
  • Cover the serving dish or individual bowls with foil paper and refrigerate over night (Very IMP).
  • To serve, sprinkle generous amount of coco powder over the set tiramisu...enjoy this dish chilled.
